Spanish Rice, lentils & Sausage
Ingredients:
- 1 tbs olive oil
- 1 package skinless beef sausage (we use Eckridge brand) cut into bite size pieces
- 1 lb (approx 2 cups) lentils
- 1 med onion, finely chopped
- 3 cloves of garlic, minced
- 1/2 tsp oregano
- 1/4 tsp red pepper flakes
- 1 tbs fresh thyme
- 5 cups chicken broth (3 cans)
- 2 packages Knorr/Lipton Spanish Rice Mix
- 1 can stewed tomatoes
Directions:
- In a medium stockpot, saute the onion, garlic and herbs in the olive oil until the onion is transparent.
- Add the chicken broth and the lentils.
- Bring to a boil, reduce heat and simmer for about 15 minutes.
- Add the Spanish rice mixes, sausage and stewed tomatoes.
- Bring back to a boil, reduce heat, cover and simmer on low for 7-10 minutes.
This makes a large one-pot meal for 6-8 people.
I served it with warm french bread, roasted garlic and a green salad. Cheese and/or sour cream are nice additions if you need to tone down heat. If you don't eat salad or want another vegetable, broccoli would go nicely I am sure.
